  Observed an employee drink stored on a shelf underneath the back prep table and prep sink on the back prep line and on a shelf above the steam well along the cooks line. Person in charge discarded both drinks.

  Observed dust build-up on the fan guards inside the walk-in cooler. Person in charge had the fan guards cleaned (Corrected on-site). Observed ice build-up inside the ice cream bunker freezer on left side of cooks line.

  Before Use After Cleaning - Utensils and food-contact surfaces of equipment are not sanitized before use after cleaning.

  Observed two quat sanitizer buckets along the cooks line to have a concentration of 0-150 ppm. Person in charge remade the buckets to reach 200-400 ppm.
