Crown Center - La Fuente Mexican Street Food

RTE TCS, Disposition - Ready-to-Eat, Time/Temperature Control for Safety Food was not discarded in accordance with the Food Code.

Observed salsa (10/4/26), fajita veggies (9/27/26), and cream cheese (10/01/26) all held longer than 7 days. Person in charge discarded the items at the time of the inspection.

Food is not stored as required by the Food Code

Observed a box of chicken stored on the floor of the walk-in freezer. Person in charge moved the chicken off the floor. Observed a box of vegetables stored on the floor of the walk-in cooler. Person in charge moved the vegetables off the floor.

Equipment not maintained free of encrusted grease/soil deposits

Observed build-up on the top of the dish machine.

Physical facilities not maintained in good repair & cleaned as often as necessary to keep them clean

Observed dust build-up on the vents and ceiling tiles around the vents throughout the kitchen and service area.

Plumbing system not maintained in good repair

Observed water spewing from the valve at the top of the high-heat dish machine towards the end of the cycle. ***VIOLATION WILL BE ASSESSED IN 3-10 DAYS***
