  Observed chipped knife in knife rack to the right of 3 compartment sink. Person in charge removed at time of inspection.

  Observed missing ceiling tile over rack to the right of dump sink. *Violation must be corrected by next routine inspection or re-inspection will occur*

  Observed 3 containers of spices on make table to the right of ice machine to have small single service sample cups being used as scoops.

  Mechanical ventilation not of adequate capacity to remove steam/heat/vapors/odors/smoke/fume

  Observed ventilation in main dining area not sufficient to remove steam from table top steamers. Person in charge stated hvac mechanic informed them one of their a/c units on roof is not working and therefore ventilation isn't able to properly vent out all the steam.
