  Observed a box of cucumbers inside the walk-in cooler with white fuzz like build-up. Person in charge discarded the cucumbers.

  Observed the 2 door reach-in cooler along the serving/cooks line unable to hold a temperature of 41 degrees or below and to be in disrepair (see temp log). Establishment has other means for cold holding along serving/cooks line.

  Cold Holding - Time/temperature control for safety cold food was not maintained at temperatures in accordance with the Food Code.

  Observed the sliced cheese inside the 2 door reach-in cooler along the serving/cooks line to be improperly cold holding above 41 degrees for less than 4 hours (see temp log). Person in charge moved the cheese to another reach-in cooler to rapidly cool to 41 degrees and below.
