Hot Holding - Time/temperature control for safety hot food was not maintained at temperatures in accordance with the Food Code.

Observed beans at 125F and nacho cheese at 132F below 135F minimum hot holding . Person in charge re-heat nacho cheese and beans at 165F and asked employee to returned items to hot well at time of inspection.

Removing Dead or Trapped Birds, Insects, Rodents, and Other Pests.

Observed dead mice under soda machine cabinet back wall in server station. Person in charge pick and throw away dead mice at time of inspection.

Effective pest control measures not in place

Observed mice droppings in gap between cabinet and wall, in drawer left rails where is no Drawer in servers drink station and behind black trap in corner cabinet and under syrup soda rack all in server station room/closet. Observed mice droppings in sound room left side under boxes and crates.

RTE TCS, Disposition - Ready-to-Eat, Time/Temperature Control for Safety Food was not discarded in accordance with the Food Code.

Observed pico container and beans container pass the seven day date for holding food after is prep. Person in charge discard containers t time of inspection.
