RTE TCS, Date Marking - Refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours was not clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, in accordance with the Food Code.

Observed no date markings on condiment cups located in salad make table in expo area of kitchen/ Person in charge dated items at time of inspection.

Equipment & Food-Contact Cleaning Frequency - Equipment food-contact surfaces and utensils shall be cleaned according to the Food Code.

Observed build-up inside of ice machine walls and lid located in kitchen area. Person in charge had ice machine cleaned at time of inspection.

Nonfood-contact surfaces not cleaned at frequency to prevent buildup of residue

Observed ice build-up on floor under racks located in walk-in freezer.

Physical facilities not maintained in good repair & cleaned as often as necessary to keep them clean

Observed build-up on floors located in kitchen area under prep table and ware wash area. Observed water build-up on floor located in prep area in front of walk-in freezer.

Separation, Packaging & Segregation - Food was not protected from cross contamination according to the Food Code.

Observed cans of soda and container of butter milk on top of small pan of cut onions located in bottom of grill make table. Person in charge removed items and discarded onions at time of inspection.
