  Nonfood-contact surfaces not made of durable, smooth materials

  Observed wood shelving behind front counter and in dry storage area. As wood becomes damaged it must be replaced with materials that are smooth, durable easily cleanable, non-absorbent and light in color. Observed wood being used as floors, walls, ceilings of walk-in cooler. Person in charge is aware that wood must be replaced if damaged or repairs must be made to walk-in cooler.

  Observed ceiling vent above back exit door to be in disrepair. Observed stained ceiling tiles throughout main kitchen area. As tiles become damaged they must be replaced with tiles that are smooth, durable, easily cleanable, non-absorbent and light in color.
