  Observed plates and cookware stored on the clean dish rack in the back prep area with the food-contact sides exposed to physical contamination. Person in charge inverted the items.

  Observed absorbent ceiling tiles in the restrooms. As the tiles become stained or damaged replace them with non-absorbent ceiling tiles.

  Observed grease build-up on the floor beneath the fryer on the main cook line. Person in charge cleaned the floor beneath the fryer at the time of the inspection.
