  Sanitizers, Criteria - Chemical sanitizers and other chemical antimicrobials applied to food-contact surfaces did not meet the requirements of the Food Code.

  Observed chlorine sanitizer buckets located in the rear prep kitchen, the main cook line, and the expo area to have a concentration greater than 100 ppm. Person in charge instructed food employee to dilute each bucket to a concentration between 50-100 ppm at time of inspection.

  Removing Dead or Trapped Birds, Insects, Rodents, and Other Pests.

  Observed a dead roach on a sticky trap under the three compartment sink in the ware wash area. Observed a dead mouse on a sticky trap near rear kitchen exit. Person in charge provided invoice from Leader Pest Control dated 8/5/26 with indications no activity found and preventative treatments used. Person in charge also discarded both sticky traps at time of inspection.
