Hand Drying Provision - Each handwashing sink, or group of adjacent sinks, is not provided with Individual, disposable towels; a continuous towel system that supplies the user with a clean towel; a heated-air hand drying device; or a hand drying device that employs an air-knife system that delivers high velocity, pressurized air at ambient temperatures.

Observed no paper towel at the hand sink near the walk in cooler. Person in charge provided paper towel at time of inspection.

Separation, Packaging & Segregation - Food was not protected from cross contamination according to the Food Code.

Observed raw chicken stored above ready to eat food. Peron in charge moved chicken to bottom shelf. Observed raw bacon stored next to tomatoes and bell peppers. Person in charge moved bacon at time of inspection.

Hot Holding - Time/temperature control for safety hot food was not maintained at temperatures in accordance with the Food Code.

Observed shredded chicken on the stove not held at a minimum temperature of 135 degrees. Person in charge discarded chicken at time of inspection.

RTE TCS, Date Marking - Refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours was not clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, in accordance with the Food Code.

Observed 3 containers of diced peppers, 1 container of chicken soup, 1 container of sliced tomatoes, 1 container of sliced ham and a container of black beans not date marked. Person in charge made discard tags at time of inspection.

Single-service/use items not stored as specified in the Food Code

Observed a case of cups and to go plates stored on the floor near the walk in cooler. Peron in charge move the cups and plates at the time of inspection.

Cold Holding - Time/temperature control for safety cold food was not maintained at temperatures in accordance with the Food Code.

Observed a case of eggs on the floor next to the grill not held at 41 degrees or less. Peron in charge discarded eggs at time of inspection.

Food is not stored as required by the Food Code

Observed a case of eggs stored on the floor next to the grill.

Mops not allowed to air dry after use

Observed 2 mops sitting in the mop sink not hung to dry. Person in charge hung mops to dry at time of inspection.

Floors/walls/ceilings not smooth & easily cleanable; and/or Utility lines unnecessarily exposed

Observed 3 missing ceiling tiles in the dish wash room.

Kitchenware/tableware not handled, displayed or dispensed to protect food-/lip-contact surfaces

Observed forks and spoons on the serving table not displayed with the handle up.

Dressing rooms not designated if employees change on-site; and/or Lockers not provided for employee belongings

Observed two purses stored on a shelf next to single use items.
