  Observed the far left chlorine sanitizer near the side kitchen door to have a concentration of 0ppm. Person in charge remade the bucket to reach 50-100ppm.

  Observed grease build-up on the hood vents above the cooks line equipment.

  Observed build-up on the bottom shelves inside the make table, 4 door reach-in cooler and single door reach-in cooler along the cooks line. Person in charge had an employee clean all mentioned areas (Corrected on-site). Observed build-up on the door handles and gaskets of the 4 door reach-in cooler and make table drawers. Person in charge had an employee clean the handles (Corrected on-site). Observed food debris build-up on the floor under the shelves inside the walk-in cooler. Person in charge had an employee clean the floor (Corrected on-site). Observed dust build-up on the fan guards inside the walk-in cooler.

  Hot Water and Chemical - After being cleaned, equipment food-contact surfaces and utensils are not sanitized in accordance with the Food Code.

  Observed the high heat dish machine unable to reach an ambient temperature of 160F degrees and above. Person in charge was able to get the dish machine to reach above 160F degrees during the inspection.
