The PHF in the hot holding warmer ranged from 88-101*F. The person in charge stated that the PHFs have only been there for one hour, and all PHFs have been reheated to 165*F. The establishment was utilizing the hot-holding unit to cook/reheat the PHF. PHF that is cooked, cooled, and reheated for hot holding must be rapidly reheated so that all parts reach at least 165*F within 2 hours, before being placed in approved hot-holding equipment.

1.) The PHF's in the make table were at 48*F. The person in charge stated that the vegetables were cut an hour ago and have been placed on ice. 2.) The reach in cooler is at 54*F, the PHFs ranged from 44-49*F. The person in charge stated the food had been moved from the commissary to truck one hour prior all items have been placed on ice. *RE-INSPECTION REQUIRED*
