There was a container of raw chicken stored on top of a container of noodles. CORRECTED. (Noodles were moved to top shelf).

MFC 3-501.16

Products in the left tall reach-in cooler in the kitchen closest to side bar had internal temperatures of 41-49*F. Ambient temperature ranged from 43-48*F All products had been in the unit overnight. Potentially hazardous products that were out of temperature were discarded. Products in temperature were moved to a working unit. RE-INSPECTION REQUIRED.

There were multiple prepared products (fiesta corn, salsa, in-house made sauces, etc) in the walk-in cooler and reach-in coolers past the required 7-day discard from indicated prep date. REPEAT. RE-INSPECTION REQUIRED.

MFC 3-501.17

There were multiple containers of prepared foods in reach-in coolers without date-marking. CORRECTED. (All products were date-marked).

MFC 4-502.11 (B)

Yellow probe thermometer was not in good repair and calibration. Thermometer showed an ambient temperature of 38*F at room temperature. CORRECTED. (Thermometer discarded. Spare working thermometer was available).

1. Observed packaged sandwiches in the grab-n-go cooler without proper labeling requirements. Sandwiches are made and packaged at establishment. Inspector emailed copy of labeling requirements.

There was discolored residue inside the gaskets of the make-table reach-in cooler in the downstairs bar area.
