The wiping cloth was being held in a bucket of sanitizer that was not reading on a test strip. CORRECTED. The sanitizing solution was measuring 200-300ppm at the three-compartment sink and the bucket was remade. The inspector advised running the dispenser for 30 seconds before filling the bucket, since this has been a repeat issue.
