Proper hot holding temperatures.
3-501.16 (A)1 Roasts in the hot holding box were only temping to 117-122. Temperatures dropped when removing them to put on the slicer. Only one of the heat lamps over the slicer is functioning. Please replace the bulb or fixture and also set the hot box to a higher temperature to avoid the roasts to fall into the danger zone (41 degrees to 135 degrees). PLEASE NOTE: employees are using the steam setting on the prep table to bring roast beef to at least 135 degrees.
