Proper cold holding temperatures
Observed raw chicken and bread batter were holding at 53-56F at breading station. Ice bath was not filled up enough. Sticker on containers shows food was set out an hour prior.Corrective Actions: Ensure to fill ice bath up enough to engulf containers of food and maintain a temperature of 41F or less. Manager moved containers of chicken to another cooler and discarded batter. Ice bath was sufficiently filled with ice before replacing chicken and batter.
