  Observed toppings cooler was holding food between 48F-54F with an ambient temperature of 58F. Food included were shredded cheese, sausage, pepperoni, ham, tomato sauce, bell peppers, etc.Corrective Actions: Ensure cooler is able to maintain 41F or less. Manager used ice to bring food temperatures down to correct temperature. Work order has been issued.

  Observed build up of food residue on sides of equipment and in gaskets of hot hold cabinets. Corrective Actions: Ensure to maintain equipment clean and free of build up.
