  Observed no time tracking for ribs stored in ice chest by smokers and beers.Manager states they usually only stay for about 1-2 hours.Corrective Actions: Ensure to keep written log for when ribs are stored in chest. Cannot exceed 4 hours.

  Observed several damp wiping cloths being stored on counters.Corrective Actions: Ensure to store wiping cloths in sanitizer in between use.

  Observed scoops with no handles were stored inside bulk bins. Corrective Actions: Ensure to use scoops with handles or store on clean surface outside of bulk containers.

  Observed damaged gaskets at walk in cooler doors, damaged wood under counter at ice cream station, damaged baseboards in walk in cooler and throughout kitchen.Corrective Actions: Ensure to replace damaged gaskets and make repairs to baseboards/surfaces that are no longer smooth, easily cleanable, and non-absorbent.

  Observed significant accumulation of dust on fan covers in walk in cooler. Observed significant grease accumulation in smoker room and ceiling tiles around smokers. Observed build up of residue on floors and corners of walk in cooler and freezer, especially underneath shelves.Corrective Actions: Ensure to maintain fan covers clean. Ensure to maintain walls and ceilings around smokers free of too much grease accumulation. Ensure to maintain floors and corners of walk in coolers/freezer clean.
