Time as public health control: procedures and records

Observed no written procedure or time logs for TCS foods at self serve station. Top section of self serve station has no cooling but had cut broccoli, rice noodles, shredded carrots, and other TCS sauces. Failure to produce written procedure for time as a public health control.Corrective Actions: Ensure to submit Time as a Public Health Control procedure to inspector and receive approval to hold TCS foods at room temperature. Foods were discarded. Do not store TCS foods at self serve station until given approval by TCPH.

Compliance with variance/specialized process / HACCP

Observed no HACCP plan for sushi rice. Manager continued to serve sushi without submitting written HACCP plan for pH testing for rice. Observed sushi rice was being held at 84F with no time tracking or pH testing log.Corrective Actions: Ensure to submit HACCP plan for sushi rice pH testing. Must receive approval from TCPH in order to hold cooked rice at room temperature. Rice was discarded.
