Observed the dishmachine washing probe is not working so the temperature of the wash cycle is not being taken. Observed the dishmachine was reaching 187*F on the rinse cycle. Observed no test strips or temperature testing device available. Corrective Actions: Ensure the dish machine probe is able to hold the highest wash and rinse temperature.Ensure to have a secondary testing device on site to ensure the dishmachine is washing properly.
