  Observed inaccurate time and temperature documentation procedures for sausage kolaches at display holding unit, with labeling for 9am, however informed the time posted is not the actual time kolaches are put into display unit.Corrective Actions: Must ensure proper and accurate temperature and time documentation procedures, with a visual representation of the time the TCS food was placed in the display unit, with a disposal time not too exceed 4 hours, as to prevent foodborne illness to the public.

  Observed spray containers containing water, stored in the food preparation area, not labeled.Corrective Actions: Must label all spray bottles, labeling it water if containing just water, for ease of identification.

  Observed sanitizing wiping cloth left out on back room food preparation table.Corrective Actions: Must return all sanitizing cloths to the sanitizer bucket after use.

  Observed multiple surfaces of food preparation equipment not kept clean to sight, such as donut fryer, hot holding unit to the left of the fryer, and the industrial mixer.Corrective Actions: Must ensure surfaces of equipment within the retail food establishment are kept thoroughly cleaned, as to prevent potential contamination of food product during use.

  Observed, in the back donut preparation room, floors and ceilings not kept thoroughly cleaned, especially underneath equipment and preparation tables.Corrective Actions: Must regularly and thoroughly clean floors and ceilings in the retail food establishment, removing old food debris accumulation, as to maintain a sanitary environment and prevent potential pest harborage.
