Observed employee food in the reach in cooler on shelves above food for consumers. .Corrective Actions: Ensure employee food and beverages and personal items (like phones and watches) are kept away from food and beverages for consumer use and off of prep tables. You may have a deep container at the bottom of the cooler labeled: "Employee use only", Phones and other personal items must be kept below and away from storage and prep areas. Proper cold holding temperatures
Observed food in the reach in cooler is 44-45F. The unit was struggling to work, and the motor/fan was making an odd noise. The temperature of the unit that was recorded from this morning was 39F, but that is from the built in thermostat, which may or may not be calibrated properly. Cream cheese single serving containers that had been stored in the back of the cooler were 44F. Corrective Actions: Manager voluntarily is discarding food product that requires refrigeration and that has been in the unit overnight. Product that was delivered this morning is being taken to a sister property for proper refrigeration. No temperature exceeded 45F. Do not return the unit to use until is is holding 41f or below. Place a container of water in the unit to verify with a stem thermometer before putting food back in the unit. We recommend 36F internal unit temperature to accommodate opening and closing of the doors. Product discarded: 3.5 gallons milk 3 boxes (100 count each) of Philadelphia cream cheese 1 Orange juice container for the dispenser 2 zip lock gallon bags of individual butter containers
