  Compliance with variance/specialized process / HACCP

  Observed a repeat violation regarding Reduced Oxygen Packaging of soft cheese. There is not a HACCP submitted, and the operation has not ceased. Corrective Actions: Manager said that they will stop the operation. Do not use the Reduced Oxygen Packaging Vacuum Sealing unit without an approved HACCP plan on file with Tarrant County Public Health.

  Variance obtained specialized processing methods

  Observed that a specialized process HACCP variance has not been obtained for ROP packaging with the Vacuum Sealing unit.Corrective Actions: If you decide to proceed with ROP packaging, it is a specialized process and requires an approved HACCP plan. Discontinue the process until there is an approved specialized process HACCP plan in place.

  Thermometers provided and accurate

  There is no thermometer inside the refrigerated display case.Corrective Actions: Ensure that there is a refrigerator thermometer inside 5e refrigerated display case. Monitor it daily to ensure food can be maintained at 41F or below.

  Hot and cold water available; adequate pressure

  Observed that the hot water at the hand sink at the cheese counter is only 80F.Corrective Actions: Hot water at hand wash sinks must be maintained at 100F minimum temperature. The hand sink in the kitchen may be used until it is repaired since there is no door between the areas. Correct within a week.
