  Observed rpasteurized shell eggs over ready to eat foods in the reach in refrigerator.Corrective Actions: Ensure that you do not store raw shell eggs over ready to eat foods. Pasteurization does not ensure 100% safety. Manager moved the eggs to be below ready to eat foods.

  Warewashing facilities, installed, maintained, used, test strips

  Observed no chlorine sanitizer test strips for the dish machine on site.Corrective Actions: Manager will purchase chlorine sanitizer sour the dish machine test strips today. Machine tested proper chlorine concentration with inspectors test strips.

  Hot and cold water available; adequate pressure

  Observed that the hot water at hand sinks was slow to reach 100F, and the hot water at the three compartment sink did not reach 110F. Corrective Actions: Ensure that you can have hot water at the three compartment sink of 110F minimum temperature readily available. If you are unable to increase the water temperature at the hot water tank due to caring for the skin of residents, or if the dish machine pulls too much hot water, then you must ensure that the water for the iKitchen has an additional means of reaching proper hot water requirements. in the meantime, the dish machine is properly sanitizing, and water for three compartment use may be temporarily have heated water added to it to achieve 110F minimum requirements. Manager has contacted maintenance.
