  Observed no paper towels at the kitchen hand wash sink for hand dryingCorrective Actions: Ensure paper towel dispensers are properly supplied.

  Observed that the sanitizer buckets were being filled with multi-purpose cleaner. Corrective Actions: Do not use multi purpose cleaner in place of sanitizer. Educate employees in the proper use of the quat sanitizer. Corrected on site.

  Proper date marking and disposition

  Observed date markings that were allowing 30 days for opened and prepared products. Chick peas and chipotle dressing were each given a month on the discard date. Corrective Actions: Ensure that once opened or prepared, temperature as a control for safety products have a 7 day date limit, unless proven or marked by the manufacturer or FDA Food Code for a longer expiration date after opening.

  Wiping cloths; properly used and stored

  Observed sanitizer buckets with zero concentration of sanitizer. Observed wiping cloths scattered throughout the kitchen and front service area and dish room that were not being kept in sanitizer water. Corrective Actions: Ensure that wiping cloths are kept in properly concentrated sanitizer water. Do not allow damp wiping cloths to remain on counters. Corrected on site.

  Utensils, equipment and linens; properly stored, dried, handled

  Observed cups for making coffee were being rinsed and stored on a mat right next to the hand wash sink. There was a hazard of hand wash water splashing onto the rinsed utensils and cups. Corrective Actions: Ensure that there is plenty of space between he hand wash sink and items being rinsed and air dried. There are two other readily available rinse stations that can be used for rinsing and air drying. Recommend that you do not use the one next to the hand wash sink.

  Observed a gap under the back door. Corrective Actions: Gaps at back doors can be insect or vermin entry points. Ensure that the gaps under the back door are filled.
