  Observed that food is not being date tracked. Corrective Actions: Manager noted that most food product is gone in 1-2 days. We discussed the requirement to date track all food that lasts for more than one day. Recommend that you train your staff to consistently date track all food foods during preparation, in order to take care of any food that extends beyond one day.

  Observed flour that is in the large bag opened at the top. Observed containers of salt and sugar sitting directly on the floor.Corrective Actions: Opened food product must be kept in tightly closed containers to prevent contamination during storage. Ensure that all food and food products are kept 6" off the floor.
