  Time as public health control: procedures and records

  Observed that the unrefrigerated protein filled breads and pastries are not being time tracked for food safety. Corrective Actions: Manager said that the breads and pastries are baked at their other location and part are brought here for sales. We discussed proper time tracking procedures for TCS products not being kept in refrigeration. Owners will do an SOP for the time tracking and disposal of the TCS products not held in refrigeration.

  Wiping cloths; properly used and stored

  Observed damp wiping cloths on various counters throughout the front and back of the establishment. Corrective Actions: Ensure that wiping cloths are maintained in properly concentrated sanitizer water between use.

  Warewashing facilities, installed, maintained, used, test strips

  Observed that the sanitizer solution was only 150 ppm, and the manufacturer instructions were 200ppm. Observed that test strips were not being used to confirm proper sanitizer concentration. Corrective Actions: Owner checked the instructions on the sanitizer and will follow their recommendation. Ensure that the sanitizer water concentration is checked with test strips every time it is set up, or if it sits unused for a while.
