  Observed cold hold chicken(service line to the left) at 44F and Parmesan cheese at 45FCorrective Actions: Cold hold TCS foods must be maintained at 41F or below to prevent food borne illnesses. Manager had initially checked temperatures in the morning at 10 AM and were all at 41F or below. Chicken was transferred back to the walk in cooler to be chilled to proper temperatures before being returned to the service line. Monitor temperatures.

  Observed bag of onions stored on the floor inside the walk in cooler.Corrective Actions: Food and food products must be stored six inches off the floor to prevent contamination. Corrected on site. Manager immediately transferred the onions to a rack six inches off the floor.

  Observed the microwave and oven(employee use) unclean with food debris and crumbs. Corrective Actions: Esure that food and non-food contact surfaces are maintained clean and sanitized to prevent pest activity.

  Observed trash(oil and food debris) outside the dumpster. Corrective Actions: Ensure garbage/refuse area is properly maintained clean. Garbage must be properly disposed of inside the dumpster.
