Observed that the water at the hand wash sinks and te 3-compartment sink is only 88F. Corrective Actions: Manager had already contacted maintenance. Due to the temperature being 88F, You may temporarily use double hand washing, hand sanitizer, and wear gloves. Repair person is on site already. Items being washed all go through the dish wash machine rather than the 3-compartment sink. Communicate with TCPH to confirm water returning to required temperatures.

Approved thawing methods used
Observed the person thawing frozen meat was not following proper thawing procedure. Observed that the meat was just in the sink with cold water, not in a pan filled with water and overflowing. Corrective Actions: Ensure that you follow proper thawing procedures for quick thawing. Have the food product in a larger pan than the product, place the container in the sink, fill the container with cold water and allow it to fill, and overflow the pan in a small stream of water over the side. Corrected on site.
