  Proper cooling time and temperatures

  Observed recently fried chicken wings were not being cooled down at proper times. Chicken was at 78F in small reach in cooler that had ambient temperature between 54-80F. Manager states it had been 2 hours since the start of process, but no times were being recorded.Corrective Actions: Ensure to follow proper cooling time and temperature requirements with written times and procedures. Must provide written procedure before implementing process.

  Proper cold holding temperatures

  Observed raw beef patties in reach in cooler by fryers was holding at 54F. Cooler was being used to cool down recently fried chicken wings and was not able to maintain a temperature below 41F.Corrective Actions: Ensure cold hold food items are held at 41F or less. Use different cooling method for chicken wings or in smaller batches. Manager moved wings to larger cooler.

  Proper cooling methods used; adequate equipment for temperature control

  Observed recently fried chicken wings being cooled in small reach in cooler by fryers. Temperature was at 78F, and manager states they were fried 2 hours before inspection. Cooler is not adequately large enough to cool portion sizes down at proper time interval.Corrective Actions: Ensure to use different cooling method for chicken wings. Reach in cooler is not large enough for process. Recommend using large baking sheets on racks to adequately cool down food items in walk in cooler.
