  Observed cut watermelon maintaining an internal temperature of 57°F on service line.Corrective Actions: Ensure to cold hold at 41°F or below. Manager stated that the watermelon had been sitting out for less than one hour and that the staff places new fruit out in between each lunch period. Item was placed back in the cooler to drop the temperature.
