Proper cold holding temperatures

Observed TCS foods such as turkey/cheese sub sandwiches, canned peaches, and baby carrots were holding between 44-50F in middle reach in cooler on serving line. Peaches were recently taken out of can within 2 hours prior to inspection and will be moved to walk in freezer. Carrots and sandwiches were stored in walk-in freezer and prepped within the same 2 hours and are currently being served. Corrective Actions: Ensure cold hold food items are held at 41F or below. Do not store in coolers until repairs are made.

Proper cooling methods used; adequate equipment for temperature control

Observed middle reach in cooler on serving line was holding between 49-55F. Observed walk-cooler was out of service. Observed double door standing cooler by restroom was ranging between 41-50F with internal thermometer reading 44F.Corrective Actions: Ensure all coolers are repaired and able to maintain a temperature of 41F or less. Coolers must be able to maintain proper temperature even with frequent opening and use of cooler. Cafeteria must switch to sack-lunches starting tomorrow until adequate cooler storage is available.

Physical facilities installed, maintained, and clean

Observed coving tile by walk-in freezer was not sealed properly to wall.Corrective Actions: Ensure coving tile is sealed to wall.

Adequate ventilation and lighting; designated areas used

Observed one light was not working in walk-in freezer and the other light was missing protective covering.Corrective Actions: Ensure to replace light bulb and install protective covering on adjacent light.
