Proper cold holding temperatures
Observed several temperature as a control for safety (TCS) items (milk) in the walk in at 45*F at the beginning of the inspection. Observed the temperature was 44*F at the end of the inspection. Observed the recorded temperature of the walk in on the recording logs at 8am was 40*F. Management had several TCS items moved to the reachin cooler by the dish area. Management will monitor the internal temperature to ensure the walk in can maintain 41*F or lower before moving the TCS items back.Corrective Actions: Ensure all TCS food items are kept at 41*F or lower at all times.
