Observed rinse cycle on high temperature dish machine reaching a maximum temperature of 167°F.Corrective Actions: Ensure wash cycle reaches a minimum temperature of 160°F. Ensure rinse cycle reaches a minimum temperature of 180°F. Person in charge stated that a work order has been placed. Ensure to use 3-compartment sink to wash, rinse, and sanitize all dishes until work order has been completed.
