Observed the final rinse temperature of the high temperature dish machine at 162F.Corrective Actions: Ensure to have the high temperature dish machine serviced to reach a final rinse temperature of 180F. Must use the three compartment sink to wash, rinse and sanitize dishes until the high temperature dish machine has been serviced.

Proper cooling methods used; adequate equipment for temperature control

Observed the walk-in cooler and an ambient temperature of 66F, walk-in cooler has been inoperable and not in use since early September of this year.Corrective Actions: Must have walk-in cooler service to properly cold, hold TCS food items at 41F or below must not store TCS food products in cooler until serviced.

Warewashing facilities, installed, maintained, used, test strips

Observed no thermal test strips or thermometer to properly test the high temperature dish machine.Corrective Actions: Ensure to obtain thermal test strips or a thermometer to test the high temperature dish machine.

Physical facilities installed, maintained, and clean

Observed small holes inbetween ceiling tiles. Observed buckets on windowsill ledge filled with water due to leak in roof. Kitchen staff states this has been an issue for years.Corrective Actions: Ensure to conceal ceiling tile holes and fix leaky roof.
