Observed shredded lettuce, shredded cheddar cheese, raw eggs, and ham stored in walk-cooler with internal temperatures ranging from 56°F to 60°F.Corrective Actions: Ensure to cold hold at 41°F or below. All items were discarded during time of inspection.

Proper cooling methods used; adequate equipment for temperature control

Observed walk-in cooler not properly functioning with an ambient temperature of 60°F. Observed only standing cooler on service line not properly functioning with an ambient temperature of 66°F. Corrective Actions: Ensure to repair/replace walk-in cooler and standing-cooler on service line to provide adequate equipment for temperature control.

Observed walk-in freezer not properly functioning.Corrective Actions: Ensure to repair walk-in freezer. Manager stated that a work order was submitted approximately three months ago.

Wiping cloths; properly used and stored

Observed sanitizer solution in sanitizer bucket stored below service line testing between 0-100 ppm.Corrective Actions: Ensure sanitizer solution is maintained at the required concentration of 200-400 ppm.

Adequate ventilation and lighting; designated areas used

Observed two lights not functioning in walk-in cooler.Corrective Actions: Ensure to replace light bulbs/fixtures to supply adequate lighting.
