  Observed the high temperature dish machine reaching a rinse cycle of 115F.Corrective Actions: Ensure to service dish machine to reach a minimum temperature of 180F for the rinse cycle. Must wash, rinse, and sanitize dishes in the 3-compartment sink until the dish machine has been serviced.

  Observed improper hot holding of chicken nuggets at 115F at the main serving line. Corrective Actions: Ensure to have items hot holding at 135F or higher. Employee put the chicken nuggets to reheat and replaced the cold ones with new-in temperature nuggets.

  Observed the standing cooler behind the main serving line not in service.Corrective Actions: Ensure to maintenance standing cooler to be able to cold hold items at 41F or below. Ensure no food items are stored in cooler until serviced.

  Observed a sanitizer bucket sanitizing at 0ppm located by the main serving line. Employee stated they forgot to add sanitizer to the bucket.Corrective Actions: Ensure to have all sanitizer buckets sanitizing at 200-400ppm. Employee refreshed sanitizer bucket.

  Observed no test strips for the high temperature dish machine.Corrective Actions: Ensure to have high temperature test strips to ensure the dish machine is reaching a rinse cycle of 180F.

  Observed improper air gap below the high temperature dish machine.Corrective Actions: Ensure to have an adequate air gap of 1 inch above drain hole.
