Observed heat sanitizing dishwasher was only able to reach a max temperature of 108F. The built in digital thermometer was reading 187F final rinse temperature.Corrective Actions: Ensure dishwasher is able to reach proper temperature before use. Surface of dishware (disc thermometer) must reach 160F, recommended that final rinse temperature reaches 180F. Ensure to sanitize dishware in 3-compartment sink until dishwasher is fixed.

Observed sanitizer buckets of quat sanitizer were reading above 400ppm.Corrective Actions: Ensure quat sanitizer concentration is around 200ppm. Recommend testing each shift change or until more familiar with water to sanitizer ratio.
