Observed shredded lettuce in cold hold well next to the fryers reaching an internal temperature of 67°F.Corrective Actions: Ensure to cold hold at 41°F or below. Manager stated that the lettuce had been out for more than four hours and discarded it during time of inspection.

Observed sliced tomatoes in toppings cooler reaching an internal temperature of 56°F. Corrective Actions: Ensure to cold hold at 41°F or below. Person in charge stated that the tomatoes had been out for less than two hours and placed them back in the reach-in cooler below to drop the temperature.
