Observed pan of Caesar salad on service line with an internal temperature of 57°F. Timer on salad indicated that it had been on the service line for less than two hours.Corrective Actions: Ensure to cold hold at 41°F or below. Manager placed ice beneath/around the pan to reduce the temperature.

Observed employee backpack stored on dry storage shelving where single-use items are stored. Observed two employee cups sitting on prep table.Corrective Actions: Ensure all personal items are stored in the area that is designated for employee belongings.

Observed single-use pizza trays stored with food contact surface facing upward.Corrective Actions: Ensure to store single-use items with food contact surface facing downward.

Observed damaged coving and floor tiles throughout the kitchen.Corrective Actions: Ensure to repair/replace damaged coving and floor tiles.

Observed light closest to fans in the walk-in freezer out.Corrective Actions: Ensure to replace/repair light bulb to provide adequate lighting in walk-in freezer.
