  Food-contact surfaces: cleaned & sanitized

  Observed that the sanitizer sink did not have adequate sanitizer concentration. Observed employee washing and rinsing the large Hobart mixing bowl, but did not sanitize it. Corrective Actions: Ensure that you are monitoring the sanitizer water with test strips when it is set up. Ensure that items washed and rinsed are also sanitized. Manager corrected on site.

  Observed that refrigerated units did not have refrigerator thermometers inside. Corrective Actions: Ensure that all refrigerated units have thermometers inside for monitoring.

  Observed the food worker washed and rinsed the Hobart mixing bowl, then set it directly on the floor. Corrective Actions: All food and food use it,RS must be stored at least 6" off the floor. Food worker RS-washed the mixing bowl and did not put it back on the floor.

  Observed employee washing a pitcher in a hand wash sink. Corrective Actions: Ensure that all food and food use items are properly washed, rinsed, and sanitized at a 3-compartment sink as required by food rules. Educatr employees on proper ware washing procedures.

  Observed that there is still not an air gap under the three compartment sink. Corrective Actions: Ensure that there is a proper air gap under the three compartment sink. You may do an angle cut to provide both the required air gap, and the protection from water all over the floor.
