Proper cooling methods used; adequate equipment for temperature control

Observed that proper cooling methods were not being used. Foods being cooled were not being monitored for time or temperature as they cooled. Corrective Actions: Ensure that food cools from 135F to 70F in 2 hours or less. Food must further cool from 70F to 41F in four more hours or less. In order to ensure proper cooling process, you must monitor the cooling process with the use of a clock/timer and a stem thermometer. We strongly recommend that you log cooling temperatures on a cooling log to ensure the process is properly done and monitored.
