  Observed an employee handle their cell phone, drink from a bottle, and return to food prep without washing hands.Corrective Actions: Ensure employees wash their hands after handling their personal items.

  Observed timer for the pizza line rang but no pizzas were turned over. Observed employee take old food items amd add them back to new pizzas.Corrective Actions: Ensure to dispose of pizzas when the timer rings.

  Observed no timer set for pizza on buffet line. Manager set timer.Corrective Actions: Ensure to time track pizzas on buffet line. TCS foods may be kept out of temperature control for a maximum of 4 hours. Time must be tracked once TCS items are removed from temperature control.

  Proper cooling methods used; adequate equipment for temperature control

  Observed cooked pastas cooling in the walk-in in stacked bus tubs with lids. Pastas ranged from 78°F to 90°F. Lids were removed and ice water was added to pastas.Corrective Actions: Ensure pasta cools from 135°F to 70°F within 2 hours, and then from 70°F to 41°F within 4 hours. Ensure cooling food items are kept uncovered and are stirred.

  Observed wiping cloth buckets at 0ppm.Corrective Actions: Ensure wiping cloths are between 200-400ppm quaternary ammonia.

  Observed a scoop for cinnamon sugar with the handle touching the product.Corrective Actions: Ensure scoop handle does not make contact with the food product.
