Observed a package of roast beef that exceeded the sell by date of 7/14/2026. TCS food must not exceed 7 days from the date of preparation or from the day the original package was opened. Corrective Actions: Ensure TCS foods are properly date marked with a date of preparation. The first day the package is opened marks day one and not to exceed seven days. Person in charge voluntarily discarded the roast beef.
