    Observed cooked chicken and sauces in the top line of the prep cooler ranging from 45°F to 51°F. Manager disposed of some of the out of temperature items. Items toward the front of the prep cooler read at high temperatures, while foods at the back of the cooler were below 41°F.Corrective Actions: Ensure to dispose of TCS items that are greater than 41°F for greater than 4 hours. Ensure to dispose of other chicken at the front side of the walk-in cooler.
