Observed no date marking for opened and prepared TCS food containers stored inside walk-in cooler.Corrective Actions: Must provide, on the container of opened and prepared food product, the date of preparation/opening, as well as the disposal date, not to exceed 7 days within the retail food establishment.

Food properly labeled; original container

Observed bulk container of flour, stored next-to the pizza conveyor oven, not labeled.Corrective Actions: Must label all bulk food containers, by common name of food stored within, for ease of identification.

Contamination prevented during food preparation, storage and display

Observed, inside the walk-in cooler, multiple prepared food, such as cut veggies and cut cooked meats for pizza toppings, not kept covered.Corrective Actions: Must provide covering for all food products while stored in the walk-in cooler, as to prevent overhead cross contamination.

Wiping cloths; properly used and stored

Observed moist wiping cloths left out on counters in the food preparation area.Corrective Actions: Must return all wiping cloths to sanitizer buckets when not in use.

In-use utensils; properly stored

Observed metal container used as an unapproved scooping utensil in the bulk flour container.Corrective Actions: Must supply and only use approved scooping utensils for bulk food, that have a handle that is extended away from food product to avoid contact contamination.

Warewashing facilities, installed, maintained, used, test strips

Observed no available chemical test strips on-site.Corrective Actions: Must provide and use chemical test strips for approved sanitizer used, for safe and effective checks of prepared sanitizer water.
