  Observed various prepared TCS foods in containers within the walk-in cooler, not reaching 41 degrees F or below (fish at 43 degrees F, rice 44 degrees F, sauces 43 degrees F).Corrective Actions: Must ensure all TCS foods remain at 41 degrees F or below, as to prevent rapid bacterial growth and the spread of foodborne illness.

  Observed multiple prepared and opened TCS foods in the walk-in cooler and cold-holding unit not properly date marked.Corrective Actions: Must provide labeling of date of preparation/opening, as well as disposition date (not to exceed 7 days within a retail food establishment), on all opened and prepared TCS foods stored on-site.

  Observed bulk containers of food product (flour) stored within dry food storage room, not labeled.Corrective Actions: Must label all bulk food containers, by name of the food stored within, for ease of identification.

  Observed wiping cloths left out on food preparation counters in the kitchen area.Corrective Actions: Must return all sanitizer cloths to sanitizing buckets when not in use.

  Observed the use of plastic bowls used as an alternative to approved scooping utensils in the bulk food container, as well as ice scoop utensil stored inside ice machine with handle in-contact with ice.Corrective Actions: Must only use approved scooping utensils with handles for bulk food containers, with the handles stored away and not in-contact with food product, as well as store ice schooling utensil outside the ice machine, so handle does not come into contact with freshly dispensed ice.
