  Observed that kolache/egg and ham products in the display case are not being time tracked. Corrective Actions: Ensure that any foods that require refrigeration for safety, yet are being kept in the display case, are time tracked to ensure proper disposal after four hours out of temperature control. We recommend you use a sticky note or some other means of marking each batch cooked so they ate are do scarfed after four hours. Time starts after they cool off to 135F from baking, and ends four hours later.

  Observed several bottles of liquids in unmarked containers. Corrective Actions: Ensure that any chemical, soap, or food product that is stored in a container it did not come in, is marked to tell the contents of the container.

  Observed that damp wiping cloths are left on various counters without being in properly concentrated sanitizer water. Corrective Actions: Ensure that damp wiping cloths are kept in properly concentrated sanitizer water buckets between uses.
