Observed hand slicer was being sanitized with unapproved sanitizer wipe. observed old food debris in slicer. observed debris in ice machineCorrective Actions: ensure food contact surfaces are properly sanitized by an approved items. ensure slicer is cleaned out properly. ensure ice machine is cleaned and sanitized

Proper cold holding temperatures

observed multiple food items in large refrigeration unit by meat slicer not meeting minimum 41 degrees or lower in cold hold fridge. food items included: - sliced roast beef and turkey at 43 degrees - meatball sauce at 43 degrees items were voluntarily discarded. Corrective Actions: ensure cold held items are maintained at 41 degrees or lower.

Gloves used properly

observed used gloves sitting in prep area. Corrective Actions: ensure used gloves are disposed of properly and not reused

Physical facilities installed, maintained, and clean

observed open cat food and a cat carrier in storage room. observed acoustic ceiling tiles in storage room Corrective Actions: ensure cat items are removed from storage areas. ensure acoustic ceiling tiles are replaced with vynll ceiling tiles
