  Observed kolaches in the reach in cooler next to the silver one by the 3 compartment sink at 55*F. Observed cases of hot dogs and hot dogs in the storage container in the reach in cooler next to the silver one by the 3 compartment sink at 59*F. The manager stated they make them daily. The manager decreased the temperature on the refrigerator.Corrective Actions: Ensure the internal temperature of the food items decreases to 41*F or lower within the next hour. If it does not ensure all the kolaches and hot dogs are discarded immediately. Ensure all temperature as a control for safety food is kept at 41*F or lower at all times.

  Observed prepped kolaches on trays and food in storage containers with no date label in the refrigerator. Observed prepped frozen sandwiches and burritos in the refrigerator on the serve line and in the freezer by the 3 compartment sink with no date label.sCorrective Actions: Ensure all prepped food and food in storage containers is date labeled with the date prepped and/or the date to discard.

  Observed kolaches with time stamps with the time but no date. Observed kolaches with no time stamp or date.Corrective Actions: Ensure all kolaches are time stamped with a date and time. Ensure to have a time as a control procedure on file with TCPH and on site to provide during inspections.

  Observed no stem thermometer on site.Corrective Actions: Ensure to have a stem thermometer on site at all times.

Ensure all damaged coving tiles are repaired or replaced.
